Southern country potatoes
This recipe is a perfect breakfast side to pair with eggs and a cup of coffee or orange juice.
Ingredients
500g potatoes, chopped into cubes
1 medium red bell pepper, chopped
1 medium yellow bell pepper,
chopped
1/2 medium green bell pepper,
chopped
1 medium onion, diced
3 garlic cloves, minced
500g Italian sausage meat,
mild or spicy
3 tbsp vegetable oil
1 tbsp paprika
1 tsp black pepper
1 tsp salt
1/4 tsp chilli powder
1/2 tsp ground sage
Chop up the vegetables and set aside.
Boil the chopped potatoes until they are halfway done, then drain and lightly pat them down with a paper towel. Put the potatoes aside.
Heat a large skillet or frying pan on medium.
Add the sausage and break it up with a spatula.
Let the meat brown a bit and then stir in the onions, bell peppers and garlic with the spices and seasonings. The oil from the minced sausage will help cook and flavour the vegetables.
Get another frying pan, add the vegetable oil and bring it to a high heat. Add the potatoes and more salt and pepper for seasoning.
When the potatoes are crisp, add the sausage and vegetable mix.
When the potatoes are tender, the dish is ready to be served.
