Simple but delicious, these prosciutto-stuffed chicken breasts will go perfect with a tart salad, or even a mushroom sauce.
Ingredients:
4 chicken breasts
4 thin slices prosciutto
4 large sage leaves
Shredded mozzarella
All-purpose flour
Salt and pepper
Olive oil
Preheat your oven to 350F/180C. Slice open the chicken breasts so that they open like a book. Season inside and out with salt and pepper, then lay a slice of prosciutto, a sage leaf and some mozzarella inside each breast.
Fold the breast back over and press down to seal. Cover each breast in flower, shake off the excess and set aside.
Heat a skillet with some olive oil. When the pan is hot enough, brown the chicken breasts one by one, about 3 minutes for each side.
Place the browned chicken breasts in a baking dish and bake at 350F/180C for about 15 minutes, or until cooked through.
